  • Pasteurized caviar has been briefly heat-treated to extend shelf life (up to a year). The trade-off is a slightly firmer texture and some loss of delicate flavor nuance. It's a reasonable choice for longer storage or gifting to someone who won't consume it immediately.

Origin and Species: What to Prioritize

Wild Caspian sturgeon caviar is now largely illegal or quota-controlled internationally, meaning essentially all commercially available caviar today comes from aquaculture. This is not a compromise — top sturgeon farms in Italy, France, Germany, China, and the US produce caviar of extraordinary quality. What matters more than wild vs. farmed is the species and the producer's standards.

Species to look for:

  • Acipenser gueldenstaedtii — True Osetra sturgeon. The gold standard for online buying.
  • Acipenser stellatus — Sevruga. Intensely flavored, smaller grain.
  • Acipenser baerii — Siberian. Reliable, affordable, excellent for first-time buyers.

Red Flags When Buying Caviar Online

  • No cold-chain guarantee: Caviar is perishable. Any reputable retailer ships with overnight delivery and insulated packaging. If shipping method is unclear, don't buy.

  • Suspiciously low prices: Genuine fresh malossol Osetra cannot be produced and shipped at a fraction of market price. If it looks too cheap, it's either pasteurized, misgraded, or old.
