Who We Are

Caviar Russe sells caviar direct to customers online and ships overnight to homes nationwide, founded in 1997. What began as a specialized caviar wholesaler has grown into a complete Caviar House — importing, selecting, and retailing some of the finest sturgeon caviar available in the United States, while also operating Michelin-starred fine dining in New York and a boutique location in Miami.

Our focus has always been the same: exceptional quality, transparent sourcing, and an unforgettable caviar experience, whether you are dining with us or enjoying it at home.

Our Caviar & Sourcing

All of our imported caviar is exclusively sourced from a single artisanal, small-batch sturgeon farm in Germany and the EU that raises pure Caspian Sea stock. Every tin is personally selected from each harvest.

We do not source any caviar from China or Chinese producers. This is a deliberate choice that sets us apart from much of the market and allows us to offer caviar that more closely resembles the classic Caspian character once found in the wild — clean, complex, and true to the traditional standard.

Our caviar is unpasteurized and prepared malossol (lightly salted) to preserve natural flavor and texture. We specialize in Osetra, offered in distinct grades from Classic to the rare Almas, alongside select other sturgeon varieties.

Why Origin Matters

Most caviar available today comes from large-scale production, much of it from China. We take a different path. By working exclusively with one carefully chosen European farm that maintains pure Caspian genetics, and by selecting each harvest ourselves, we control quality at the source. The result is caviar with greater consistency, cleaner flavor, and a closer connection to the historic Caspian standard.

Where To Purchase

All of our Caviar is available for direct purchase online for shipping to your home via FedEx Priority Overnight. All deliveries or pick ups can be scheduled to a date of your choosing during checkout. Additionally we have two physical locations, one in New York, 538 Madison Avenue, or Miami, 1441 Brickell Avenue, where you can purchase in person with the assistance of our trained teams who can answer any questions you may have.
