How to Store Caviar: Freshness, Shelf Life & Best Practices

Proper storage is the difference between a transcendent experience and a disappointing one. Whether you've just received a tin as a gift or are stocking up for a special occasion, here's everything you need to know to keep caviar at its peak.
Unopened Caviar: Refrigerator Storage
Store unopened tins in the coldest part of your refrigerator — typically the back of the bottom shelf or the meat/deli drawer. The ideal temperature range is 28°F to 32°F (-2°C to 0°C). Standard refrigerators run at around 37°F (3°C), so placing caviar near the back, away from the door, is essential.
A simple trick: place the tin on a bag of crushed ice inside the refrigerator if your fridge doesn't reach those lower temperatures.
Shelf Life by Caviar Type
- Fresh, caviar (vacuum-sealed tin): 4 weeks unopened from the date of processing
- Pressed caviar: Up to 6 months unopened due to its concentrated preparation
After Opening: Consume Quickly
Once a tin is opened, the clock starts ticking. Caviar exposed to air begins to oxidize and lose its delicate flavor profile. Best practice:
- Consume opened caviar within 24–48 hours
- If you must store an opened tin, press a piece of plastic wrap directly against the surface of the caviar to minimize air contact, then reseal the lid tightly
- Return immediately to the refrigerator — never leave at room temperature for more than 15 minutes
Can You Freeze Caviar?
Technically yes, but it is strongly discouraged. Freezing ruptures the delicate roe membranes, dramatically altering texture and flavor. The caviar becomes mushy and loses the characteristic "pop" that defines high-quality roe. If you must freeze it, understand the texture will be compromised — it may still work in cooked preparations but should not be served as a standalone delicacy.
Signs of Spoilage
Fresh caviar should smell clean and briny — like the ocean. Discard caviar that:
- Has a strong, fishy, or ammonia-like odor
- Appears excessively runny or broken down
- Has visible mold or discoloration
- Tastes sour, overly bitter, or "off"
Transporting Caviar
When transporting caviar — whether from a restaurant, a gift delivery, or our store — keep it insulated in a cooler with ice packs.
