Caviar 101

Generally, roe encompasses all of the unfertilized eggs produced by any species of fish. However, only sturgeon produce roe that can be classified as Caviar.

Unfortunately no, Beluga was listed as an endangered species and its trade, even if farmed, is prohibited in the United States. However, Beulga caviar alternatives include caviar from Osetra, Sevruga, Pacific and Siberian sturgeons.

Generally, caviar has a 3-4 week refrigerated shelf life. However, once opened, it is best to consume the caviar within 1-3 days as it will begin to oxidize like any other food.

We generally recommend a serving of Caviar to be at least an ounce of Caviar per person.

There is no wild caviar available as fishing for sturgeon was barred in the early 2000's.

Traditionally, wild caught caviar presented three different types of caviar, Sevruga, Osetra & Beluga, today with farming that list of commonly seen caviar now includes additions such as Siberian Sturgeon & Pacific Sturgeon.

The main determinant factor for price is the time a sturgeon needs to produce caviar. The less expensive sturgeon, such as the Siberian Sturgeon, takes somewhere from 3-5 years to mature, while the Osetra may take upwards of 15 years to reach maturity.

Caviar is simply the roe of sturgeon that is lightly salted for taste using traditional malossol methods. Long considered a delicacy, caviar is eaten as a garnish or a spread, perfect for special celebrations or an indulgence. The term ‘Caviar’ traditionally refers only to roe from wild sturgeon in the Caspian Sea and Black Sea (Beluga, Osetra, and Sevruga caviars). Today, caviar is farmed around the world, and includes different sturgeon varieties, including Sterlet, Pacific Sturgeon, and Siberian Sturgeon. Caviar may also refer to the roe of different fish, such as Salmon and Trout.

    WHAT IS CAVIAR?

    Caviar is a food consisting of salt-cured roe of the family Acipenseridae. Caviar is considered a delicacy and is eaten as a garnish or spread. Caviar refers only to roe from sturgeon and was famously associated with three types of sturgeon, Beluga, Ossetra and Sevruga caviars. Caviar is made of unfertilized fish eggs, or fish roe, cured with salt. So, the true high-quality caviar must contain only these two ingredients: sturgeon roe (i.e. caviar) and salt. Caviar is simply the roe of sturgeon that is lightly salted for taste using traditional malossol methods.     WHERE DOES CAVIAR COME FROM?

    Caviar today is no longer wild caught but instead Caviar is farmed throughout the world from different sources. Primaraly in the US & Europe the majority of caviar consumed either direct to consumer or while dining out is produced in China. Caviar Russe does not sell any Chinese produced caviar. Although caviar is being farmed what determines the quality of the caviar produced is the original stock of caviar sturgeon the farmed produces its caviar from, similar to the original grape vines on a vineyard. Caviar Russe is proud that is exclusive farm uses pure Caspian Sea stock which originated directly from in the Caspian Sea and not second hand. The source of the caviar influences the price of caviar, Chinese produced caviar tends to be relatively inexpensive, but generally pricing of caviar today is dictated by the length of time a farm needs to support the caviar sturgeon prior to producing caviar, in addition to the quality of the final produced caviar.

Caviar Russe does not source any product from China or Chinese Caviar sources, differentiating us from much of the market. Caviar Russe's exclusive caviar aims to preserver the rich history of Caviar and present Caviar that resembles Caviar which was once available in the wild from the Caspian Sea. Although traditionally there were three types of well known Caviar, Beluga, Osetra and Sevruga, today we proudly continue to specialize in Osetra as well as carrying five other species of Caviar in addition to Sevruga.

    TYPES OF CAVIAR & CAVIAR PRICE

    Caviar Russe primarily focuses on 5 species of sturgeon caviar, Osetra Sturgeon, Sevruga Sturgeon, White Sturgeon, Siberian Sturgeon and Sterlet Sturgeon. At this time we do not carry Hackleback Caviar, Paddlefish Caviar or Beluga Caviar. The cost of caviar is primarily dictated on two, the time it takes for a sturgeon to mature to produce caviar, the longer, sometimes up to 10 years, the more costly the Caviar is, the second, would be quality of the eggs, the larger and lighter Caviar being more expensive.
